Land of Fire and Ice

Hi five readers! It’s been a million four months since I last posted. oops. How have y’all been?

Well, life hasn’t really calmed down much. We moved into our new home in May, and have been working and traveling like crazy people ever since.

D and I just got back from Iceland! It was part work/part fun trip over our 3rd wedding anniversary. It was amazing!

Ice? I don’t see any ice?

I was pleasantly surprised that everywhere we ate, they seemed to have a good knowledge of what vegan means and were happy to accommodate us. One of the best meals we had was in our own hotel, and they made an AMAZING vegan pesto pizza on sourdough bread with a vegan lasagna. They make a local vodka that’s pretty good called Reyka, which we actually found in a local liquor store in Atlanta for only $20 a bottle, which was cheaper than the airport. Brennivin is the local drink of choice. We scored a bottle at the airport too. They also make this delicious Birch liquor. . . so, you can see we drank our fair share of the local brew.

Now, there are some restaurants that serve puffin and whale. I don’t know why anyone would want to eat an adorable puffin, but it’s pretty easy to avoid those restaurants. However, on the flip side, there are several restaurants that carry a “whale friendly” sticker on their door to show that they don’t support the unnecessary whaling. 75% of icelanders DON’T eat whale meat. It’s mainly the tourists that eat it.

Anyway, I’m stepping off my soap box. . .

We also visited a beautiful tomato farm/greenhouse during our stay.

They utilize geothermal energy to heat the greenhouses, which makes it possible to grow produce. Their tomatoes were beautiful and completely organic. No pesticides are used in the making of these babies.

Overall Iceland is extremely clean and the locals are very friendly. It seems like everyone who lives there understands and has a very healthy and nurturing relationship with nature.

It’s truly one of the most beautiful places I’ve ever been. Definitely up in the top three with Alaska and Kauai. I hope Iceland stays as beautiful as it is now, forever.

 

Well, Hello There. . .

Life has been happening. Lots of it. Which hasn’t left time for blogging lately.

Honestly, I haven’t been doing a lot of cooking, so I don’t have much interesting content since I haven’t been trying new recipes.

Also, we just bought a house! So we are moving next weekend! Which means we need to pack.

I’m hoping once we are in the new house, with a bigger, better kitchen, that I’ll have more inspiration to cook and share new recipes on the blog. Also, because life is so busy, I’m taking a hiatus from teaching regular yoga classes. But hopefully still subbing from time to time.

However, I will keep my “Where Can a Vegan Eat in Atlanta” page up to date. I’ve noticed that page getting a lot of hits, which is great! Please send me your tips, either in the comments or at formerfishtacofanatic@gmail.com and I’ll add to the page.

 

Resolutions

Happy New Year!

I always like to recap progress on last year’s resolutions, and set some new ones so I have goals in mind for the coming year. Let’s see how 2013 panned out shall we?

1. Successfully complete Yoga Teacher Training! – Done. I did it! Now to continue to be a student, and hone my teaching skills.

2. Proactively hang out with my friends (i.e. Invite people places more) – I was better at this with some friends more than others. I will strive to be a better inviter in 2014.

3. Only drink once a week during teacher training – I can’t remember if I was successful at this. . .probably because I wasn’t. lol.

4. Don’t cheat anymore with dairy products. – I cheated. It wasn’t horrible, but it’s hard sometimes to avoid the dairy. Especially when travelling for work. It’s possible though. and I can do better.

5. Travel for Fun – Check! We went to Hawaii, Austin, and Raleigh for fun. I did Memphis for work/fun. 2014 might bring some more exciting travels, we shall see!

So, what are resolutions for 2014?

1. Establish a daily yoga practice – even if it’s just getting on the mat for 3 sun salutations. I will do #yogaeverydamnday in 2014.

2. Participate in a yoga workshop at least once per quarter – to continue to hone my skills as a student and become a better teacher. This might also help to lead to 3. . .

3. Press up into handstand – this is a lofty goal. Especially since I can’t stick handstand yet in the middle of the room. We all have to start somewhere.

4. Be present. – I am so easily distracted. by technology. by my thoughts. I will work harder to be present and in the moment.

5. Become a morning person. – I am not a morning person. Never have been. BUT, I want to be. I want to jump out of bed energized in the mornings. So, I must condition myself and establish a good morning ritual to look forward to everyday.

Hey guys,

How’s it going? Long time no see?

Remember that time I said I’d be blogging again in June? Whoops.

So, let’s recap all that’s happened since March:

  1. I got my 200-hour yoga certification! Woohoo! And started teaching yoga twice a week, and subbing lots.
  2. We traveled to Hawaii, Raleigh, and Austin. It was all fun, and full of yummy vegan eats. Perhaps I will do a summer/fall travel roundup with the food photos I took along the way.
  3. I got promoted at work. Awesomesauce.
  4. I got another year older. But that’s cool.
  5. I went to Atlanta VegFest 2013, and it was awesome.
  6. We ate out more than I cooked.
  7. I started a new blog for a second, and then realized that I already have some loyal readers at this domain, so I decided to delete that blog and pick back up over here.

So, thank you to the folks that keep checking in on the blog, and that keep sending suggestions for the “Where Can a Vegan Eat in Atlanta” page.

Now that I’ve been teaching/taking lots of yoga, I’ll start covering that topic a little more here. I’ve written about Ahimsa before, so living that branch of yoga definitely fits in with the blog.

The past 9 months have been a blur. But, I’m going to start updating more frequently again. Also, I’ve still been reading lots of vegan blogs, and getting inspiration from all of you!

Hiatus

I’ve been a bad bad blogger. I apologize. I’m juggling a busy season at work, with an exciting adventure to become a yoga teacher (which includes homework), with family time and friend time. So, I don’t have a lot of time or leftover brain space right now to blog.

BUT, Former Fish Taco Fanatic will be back in June, so come back and stay tuned for some changes!

Husband-Friendly Vegan Meals

As we’ve transitioned to a vegan diet, I have compiled a list of my hubbers favorite meals. He’s a tall guy with a healthy appetite, and I like to make sure that I’m cooking meals that can keep him full.

Veganizing an Old Favorite: Mom’s EasyPeasy Pot Roast

Well, this year has already been crazy busy – but all with good things so I can’t complain! Alas, I haven’t had much time for blogging, but I HAVE been cooking and have accumulated some good posts.

One of the dishes that I miss the most is my mom’s pot roast recipe. It was always super easy, and I would make it in the crock pot so it would cook all day and I would come home to a filling one-pot meal. After figuring out how to veganize her brisket recipe for Chanukkah, I decided to tackle the pot roast next.

And it is still easy peasy.

Mom’s EasyPeasy Pot Roast

  • Sprinkle a packet of onion soup mix on the bottom of the crock pot
  • Add two packages of Gardein Beef Tips
  • Add 6 quartered red potatoes and a bag of baby carrots
  • Add 1 cup of vegetable broth and 1/2 cup water
  • Sprinkle second packet of onion soup mix on top
  • Cover and cook on low for 6-8 hours

Voila! An easy and filling one-pot meal that leaves your house smelling like you’ve been slaving away in the kitchen all day!
